Okay so BPM is the obviously the current BPM the track is set at and Track BPM is the original BPM of the track, but what is Stable BPM?

It's when the BPM is tracking at exactly what it says it is in the embedded metadata. Stable BPM is a term most often used with DVS (timecoded) or just straight vinyl or cdj mixing where the track isn't, necessarily, already embedded with it's actual BPM
and you're having to "ride" the pitch fader to keep it in sync. With any modern/non timecode DJ setup with a properly "gridded" track, stable BPM is an unnecessary descriptor.
